Long and thin, enoki mushrooms grow on tree trunks, roots, and branches in Japan. Enoki mushrooms are commonly found in such Japanese dishes as sukiyaki and nabemono. Grown and packaged in clusters, enoki mushrooms have a refrigerator shelf life of one week.

 

 





Enoki Mushroom Soup by Elle Bee

Cook Time: 15 minutes

Yields: 4 servings

 2 Tbsp. finely chopped onion

  • 1 Tbsp. butter
  • dash of thyme
  • 1/2 bay leaf
  • 1/2 tsp. salt
  • 1/2 tsp. paprika
  • 1/4 cup dry white wine
  • 1 can chicken broth
  • 2 Tbsp. flour
  • 1 package Enoki mushrooms
  • 1 cup milk
  • 1 dry sherry
  • chopped parsley for garnish

1. Saute onion in butter in large saucepan until onions are translucent and slightly browned.

2. Add thyme, bay leaf, salt, paprika, wine and all but ¼ cup chicken broth to sautéed onions. Cover mixture and allow to simmer for 15 minutes.

3. Remove bay leaf and add remaining ¼ cup chicken broth and flour. Stir until mixture begins to thicken.

4. Add enoki mushrooms and simmer for 1 minute.

5. Stir in milk and sherry.

6. Turn heat down to low; do not boil.

7. Garnish with chopped parsley (optional).

8. Serve.

2 Shiitake mushroms

  • 1 cluster Enoki mushrooms
  • 1 piece fresh ginger
  • Sauce:
  • 5 tbsp. soy sauce
  • 2 tbsp. sake
  • 2 tbsp. mirin
  • 1 c. dashi
  • salt to taste

Directions

1. Soak shitake for 10-15 minutes. Remove from water and cut into thin slices.

2. Repeat the process for enoki mushrooms, cutting mushroom into 1-inch lengths.

3. Chop up fresh ginger.

4. Mix sauce ingredients. Add shoga and bring liquid mixture to a boil. Allow to boil for 30 seconds to 1 minute, and add the mushrooms to the sauce and reduce heat to medium. Continue to simmer until all the broth has evaporated.

5. Serve.

* 1 pkg. Enoki mushrooms
* 2 tablespoon soy sauce
* 2 tablespoon dry sherry
* 1 teaspoon Chinese mustard
* 1 tablespoon minced green onion

Directions

1. In a small serving bowl, mix together soy sauce, dry sherry, Chinese mustard and green onions. Set aside.

2. Rinse mushrooms thoroughly and cut off bottoms of stems.

3. Serve mushrooms on tray with sauce.

Yields: 4 servings

Ingredients

2 tablespoons minced fresh cilantro
1 tablespoon low-sodium soy sauce
1 teaspoon sugar
4 teaspoons rice vinegar
1/2 teaspoon vegetable oil
1/4 teaspoon salt
1/8 teaspoon ground red pepper
6 cups gourmet salad greens
2 cups enoki mushrooms, roots trimmed (about 3 ounces)
2 tablespoons thinly sliced green onions
Directions

1. Combine the first 7 ingredients in a large mixing bowl and stir together with a whisk.

2. In a separate bowl, combine salad greens, mushrooms, and green onions.

3. Pour dressing over salad and toss gently.

4. Serve.

Patchwork Merchant Mercenaries had its humble beginnings as an idea of a few artisans and craftsmen who enjoy performing with live steel fighting. As well as a patchwork quilt tent canvas. Most had prior military experience hence the name.

Vendertainers that brought many things to a show and are know for helping out where ever they can.

As well as being a place where the older hand made items could be found made by them and enjoyed by all.

We expanded over the years to become well known at what we do. Now we represent over 100 artisans and craftsman that are well known in their venues and some just starting out. Some of their works have been premiered in TV, stage and movies on a regular basis.

Specializing in Medieval, Goth , Stage Film, BDFSM and Practitioner.

Patchwork Merchant Mercenaries a Dept of, Ask For IT was started by artists and former military veterans, and sword fighters, representing over 100 artisans, one who made his living traveling from fair to festival vending medieval wares. The majority of his customers are re-enactors, SCAdians and the like, looking to build their kit with period clothing, feast gear, adornments, etc.

Likewise, it is typical for these history-lovers to peruse the tent (aka mobile store front) and, upon finding something that pleases the eye, ask "Is this period?"

A deceitful query!! This is not a yes or no question. One must have a damn good understanding of European history (at least) from the fall of Rome to the mid-1600's to properly answer. Taking into account, also, the culture in which the querent is dressed is vitally important. You see, though it may be well within medieval period, it would be strange to see a Viking wearing a Caftan...or is it?

After a festival's time of answering weighty questions such as these, I'd sleep like a log! Only a mad man could possibly remember the place and time for each piece of kitchen ware, weaponry, cloth, and chain within a span of 1,000 years!! Surely there must be an easier way, a place where he could post all this knowledge...

Traveling Within The World is meant to be such a place. A place for all of these artists to keep in touch and directly interact with their fellow geeks and re-enactment hobbyists, their clientele.
