Nut Cutlets~One of my all time favourites!

A popular dish with vegetarians, and if this recipe is followed will satisfy carnivores as well. I egg can be mixed in if you need a more stable texture - say for a barbecue.

1 medium-sized Onion, peeled and finely-chopped

  • 1 oz/30gr Butter (dairy-free cooking spread for vegans)
  • 1 medium cloves of Garlic (peeled & finely-chopped)
  • 8 oz/250gr Mixed Nuts - these can be cashews, peanuts, walnuts (a variety makes the flavour more interesting)
  • 4 oz/120gr fresh Wholemeal Bread, made into breadcrumbs, in liquidiser/processor see below
  • ½ pint Vegetable Stock (we find that made with Knorr or Marigold the best, unless making your own)
  • 2 teaspoons (10ml) Yeast extract
  • 1 teaspoon (5ml) dried Herbes de Provence or Mixed Herbs- try the excellent mixture from www.gourmetherbs.co.uk (containing both green anise & lavender) if using the former
  • Salt and freshly-ground Black Pepper to taste.
  • 1 medium egg, lightly-beaten (optional)
  • A further 4 oz/120gr fresh breadcrumbs (wholemeal if possible) made in a food processor
  • 2 tablespoons (30ml) Sunflower Oil - for frying

Equipment needed:

a liquidiser or food processor

Method:

  1. Gently melt the butter in a saucepan and sweat the onions and garlic until they're transparent but not brown
  2. Grind the nuts in a liquidiser/food processor, blend them in with the breadcrumbs and onion mixture.
  3. Heat the stock and yeast extract to boiling point, add the herbs to this, then mix in in with the nut and breadcrumb mixture.
  4. Allow to cool a little then taste for seasoning. You may not need much salt, this will depend on the saltiness of your stock, but pepper adds interest. If you wish to make the cutlets more manageable now is the time to mix in the egg.
  5. Form the mixture into 6 burger-shaped patties, then lightly coat these in the 2nd batch of breadcrumbs.
  6. Chill the cutlets in the fridge for a while (a minimum of 30 minutes) to firm up.
  7. To cook: If frying, heat the sunflower oil in a deep frying pan and fry the cutlets for 3 minutes on each side, or until they're golden. Alternatively they can be barbecued.

Vendertainers that brought many things to a show and are know for helping out where ever they can.

As well as being a place where the older hand made items could be found made by them and enjoyed by all.

We expanded over the years to become well known at what we do. Now we represent over 100 artisans and craftsman that are well known in their venues and some just starting out. Some of their works have been premiered in TV, stage and movies on a regular basis.

Patchwork Merchant Mercenaries a Dept of, Ask For IT was started by artists and former military veterans, and sword fighters, representing over 100 artisans, one who made his living traveling from fair to festival vending medieval wares. The majority of his customers are re-enactors, SCAdians and the like, looking to build their kit with period clothing, feast gear, adornments, etc.

Likewise, it is typical for these history-lovers to peruse the tent (aka mobile store front) and, upon finding something that pleases the eye, ask "Is this period?"

A deceitful query!! This is not a yes or no question. One must have a damn good understanding of European history (at least) from the fall of Rome to the mid-1600's to properly answer. Taking into account, also, the culture in which the querent is dressed is vitally important. You see, though it may be well within medieval period, it would be strange to see a Viking wearing a Caftan...or is it?

After a festival's time of answering weighty questions such as these, I'd sleep like a log! Only a mad man could possibly remember the place and time for each piece of kitchen ware, weaponry, cloth, and chain within a span of 1,000 years!! Surely there must be an easier way, a place where he could post all this knowledge...

Traveling Within The World is meant to be such a place. A place for all of these artists to keep in touch and directly interact with their fellow geeks and re-enactment hobbyists, their clientele.
